Chocolate coconut mug cake

Nothing quite beats chocolate and coconut to satiate that sweet tooth. If you can’t get enough chocolate during the winter, you’ll love this recipe!

 

Serves: 1

Prep time: 5 minutes

Cook time: 80 seconds

 

Ingredients:

2 tablespoons caster sugar

2 tablespoons butter

1 tablespoon cocoa

1 tablespoon chocolate chips

1 tablespoon desiccated coconut

1 egg

¼ cup self-raising flour

 

 

Method:

1. Grab your favourite large mug. Pour the flour, cocoa and caster sugar into the mug and mix together.

2. Add in the chocolate chips and desiccated coconut.

3. Mix to combine.

4. In a bowl, melt the butter in the microwave for 30 seconds.

5. Add the egg to the melted butter and combine.

6. Pour the butter mixture into the dry ingredients and combine.

7. Pop the mug into microwave on high for 80 seconds.

8. Serve immediately. You may like to top this cake with berry coulis or a generous scoop of ice-cream!

 

 

Banana and cinnamon mug cake

If you’re after a mug cake with a touch of sweetness that isn’t overbearing, try this banana and cinnamon combination.

 

Serves: 1

Prep time: 5 minutes

Cook time: 90 seconds

 

Ingredients:

2 tablespoons butter

2 tablespoons caster sugar

1 teaspoon cinnamon

1 egg

1 small ladyfinger banana, mashed

¼ cup self-raising flour

 

Method:

1. Pour the flour, caster sugar and cinnamon into a large mug and mix together.

2. In a bowl or cup, melt the butter in the microwave for 30 seconds.

3. Add the egg and mashed banana to the melted butter.

4. Pour the butter mixture into the dry ingredients and combine.

5. Microwave on high for 90 seconds.

6. Serve immediately. Sprinkle with more cinnamon if desired.

 

Carrot and ginger mug cake

Prefer savoury to sweet? The carrot and ginger mug cake is the way to go. Give it a try!

Ingredients:

1 ½ tablespoons caster sugar

1 ½ tablespoons butter

1 tablespoon finely grated ginger

1 baby carrot, grated

1 egg

¼ cup self-raising flour

 

Method:

1. Mix together the flour and caster sugar in a large mug.

2. In a separate mug or bowl, melt the butter in the microwave for 30 seconds.

3. Add the egg to the melted butter.

4. Pour the butter mixture into the dry ingredients and combine.

5. Add in the grated carrot and ginger and combine.

6. Microwave for 90 seconds.

7. Serve immediately. You may like to top this cake with custard or a dollop of cream.
