Christmas pudding trifles

Winter in Australia not snowy enough for you? Do your own snowmaking in the kitchen during the cooler season with this tasty white-topped dessert. And look no further for more festive wintry inspiration with more of our Christmas in July ideas.

 

Serves 4 

2 small oranges, peeled

½ tbsp raw sugar

1 tbsp Grand Marnier liqueur (optional)

300g Christmas pudding (store-bought or your favourite traditional recipe)

250g mascarpone

1 tsp vanilla extract

3 tsp icing sugar, plus extra for dusting

200mL cream, whipped

¼ cup flaked almonds, toasted


  1. Thinly slice oranges (discard seeds) and place in a small bowl with the raw sugar and Grand Marnier (if using). Set aside to let sugars and flavours combine for 20 minutes.
  2. Break Christmas pudding into bite-sized pieces and divide half the pudding among 4 glasses or glass jars. Divide orange slices among the glasses, pouring over any juice from the bowl.
  3.  In a medium bowl, beat together mascarpone, vanilla and icing sugar until combined. Divide dollops of the mixture among the jars and top with remaining pudding.
  4. Spoon a dollop of whipped cream over the top of this layer of pudding and sprinkle with flaked almonds. Give the mini trifles a final dusting of icing sugar to serve.
