Four delicious ways to serve prawns

Being healthy, versatile and delicious, prawns are guaranteed to please a crowd this Australia Day. Plus you don’t necessarily need to fire up the barbie to prepare them – buy cooked prawns and you have yourself a ready-made snack.

 

Prawns are sold in all forms, including cooked, raw, frozen and fresh. There are also multiple varieties, including king, tiger, banana and school. Check out this prawn table to find out more about each variety and its uses.

 

Here are four simple recipe ideas that give this seafood star a fuss-free gourmet twist.

 

Prawns with ginger soy dipping sauce

Need finger food in a flash? Place ½ cup soy sauce, ¼ cup white vinegar, 1 tbsp of sugar and 1 tbsp of grated fresh ginger in a lidded jar and shake well to combine. Transfer to a dipping bowl and serve with cooked peeled prawns.

 

Fancy finger sandwiches

Whether it’s a formal ladies’ high tea or a family picnic in the park, finger sandwiches always seem to get gobbled up. To make 4 sandwiches or 12 ‘fingers’, combine 200g chopped prawns (cooked and peeled) in a bowl with 1/3 cup mayonnaise, 1 tbsp lime juice, 1 tbsp chopped dill and 1 tbsp chopped chives. Divide prawn mixture among 4 slices buttered white bread, then top with 4 more slices to make sandwiches. Trim crusts using a sharp, serrated knife, then cut each sandwich into 3 fingers to serve.

 

Top tip: Buy 400g of prawns in the shell to get about 200g of prawn meat.

 

Revamped prawn cocktail

This fresh, fruity prawn cocktail drags a classic 1980s favourite into the modern age. To make 4 serves, combine 1/3 cup whole-egg mayonnaise with a generous squeeze of lime juice and 2 thinly sliced green onions. Arrange 400g cooked peeled prawns, 1 sliced mango and 1 sliced avocado amongst four cocktail glasses. Top with mayonnaise mixture to serve.

 

Prawn and chorizo pizza

There’s no need to order in when you can make your own gourmet pizza in less than 30 minutes. To make one 26cm pizza, spread a store-bought pizza base with tomato pizza sauce. Top with 12 peeled green prawns, 1 thinly sliced chorizo sausage and 150g crumbled feta. Bake in a preheated 220°C oven for 15-20 minutes until the prawns are cooked and the base is crisp. Top with fresh rocket leaves to serve.

 

The humble prawn is one of the easiest seafoods to prepare and allows you to whip up an impressive snack, starter or main within minutes. And even though we Aussies often consider prawns a celebration food, there’s no reason why you can’t treat your family or friends to a mid-week prawn platter.
