Quick ‘n’ healthy quiche

Looking for a family feast that is as flavourful as it is filling? In this category, nothing quite beats the quiche. If you’re trying to get the kids to eat good food, or just trying to watch the waistline, then this creative quiche recipe is sure to impress. Using this recipe, which swaps puff pastry for mountain bread wraps, you can now treat your friends and family without the added calories. Better yet, if you have a few leftover eggs, these tips will help you make the most of them!

Healthy Mini Quiches
Makes: 8 mini quiches
Cooking time: 12 minutes
Preparation: 10 minutes


  • 4 mountain bread wraps
  • 4 eggs
  • 4 slices of ham, sliced (hint: use smoked salmon if seafood option is preferred)
  • 50g reduced-fat fetta cheese
  • ¼ cup almond milk
  • Fresh basil, chopped
  • Salt and pepper, to season


  • Place eggs and milk into a large bowl and whisk to combine.
  • Season egg mixture with salt and pepper and set aside.
  • Remove 4 wraps from the packet. Fold each wrap into quarters and break into equal parts.
  • Spray your muffin tray generously with olive oil.
  • Take 2 squares of wraps, one on top of another, and place into the pan. Repeat until you have 8 pans filled, each with 2 squares of wrap.
  • Distribute the basil and ham (or salmon) evenly among the cases.
  • Pour egg mixture into each case until ¾ full.
  • Top each case with fetta.
  • Bake in oven on 180°c for 12 minutes or until golden brown. 
  • Serve warm.

While these treats are best enjoyed fresh, another great idea is to put them into individual freezer bags and freeze for school lunches! Simply take one out and put it into your child’s lunchbox of a school morning, and it will be defrosted by the time they’re ready to eat.
